Abstract
Dr. Carol Longley discussed her journey into dietetics, influenced by her aunt and mother. She initially aimed for food science but ended up in foodservice due to job opportunities. She worked for Aramark and Service Master, managing foodservice operations. Her PhD from Iowa State focused on child nutrition. As a food service director, she enhanced a school district’s management practices, leading to the District of Excellence award. Key mentors included Rita Paris and Jeannie Sneed. She emphasized the importance of pairing food service management companies with dietetic education and the unique decision-making skills of dietitians in managing food services.
