Obtencion y Degustacion de Papillas de Alto Valor Energetico Proteico en Base a Tuberculo-Cereal-Leguminosa en la Zona de Candelaria
Abstract
Specially designed foodstuffs destined for children of weaning age in the community of Candelaria were developed and evaluated biologically. These victuals had as bases combinations of tubers-cereals-legumes of high nutritional quality to be implemented in the home. Based on the availability of food and alimentary habits of the region, seven mixtures were formulated of triples and quadruples containing tubers (potato, oca, papaliza, and isano); cereals (rice, wheat, corn, and quinua); and legumes (tarwi, broad bean, and peanut). The cereal-leguminous proportion was maintained as one complement and the addition of the tubers. These mixes were subjected to biological tests, obtaining incremental measures in weight, PER, digestibility of the energy and protein, and energy density. From the results, five were selected of the best biological quality, considering principally the digestibility of the energy and protein whose values oscillated between 76% and 93% and 75% and 90% with an energy density of 1.2-1.6 kcal/gram. Of these, mixtures (pottages) were prepared which were evaluated sensorially, being submitted to three types of tests: a descriptive test, a quality test of sensorial valuation, and an acceptability test. Through the aforementioned, this work complied with the objectives of evaluating the mixtures with high protein-energy value and which cover the necessary requirements for children of weaning age.

Se desarrolló y evaluó biológicamente alimentos destinados para niños en edad de destete de la comunidad de Candelaria en base a combinaciones de tubérculo-cereal- leguminosa de alto valor nutritivo, para ser aplicadas a nivel del hogar. En base a la disponibilidad de alimentos y hábitos alimentarios de la zona, se formularon siete mezclas entre triples y cuadruples, las cuales contenían tubérculos (papa, oca, papaliza, isaño); cereales (arroz, trigo, maíz, quinua) y leguminosa (tarwi, haba y maní), manteniéndose la proporción cereal-leguminosa como un solo complemento y la adición del tubérculo. Dichas mezclas fueron sometidas a pruebas biológicas, obteniéndose incremento en peso, PER, digestibilidad de la energía y proteína y densidad energética. A partir de los resultados se seleccionaron las de mejor valor biológico que fueron cinco, considerando principalmente la digestibilidad de la energía y proteína cuyos valores oscilaron entre 76% y 93% y 75% y 90% con una densidad energética de 1.2 - 1.6 kcal/gramo, de las que se preparó papillas evaluadas sensorialmente, siendo sometidas a tres tipos de pruebas: test descriptivo, test de calidad de valoración sensorial y test de aceptabilidad. Los resultados mostraron que cuatro de las papillas son las de mejor aceptación. Por lo anteriormente indicado, el presente trabajo cumplió los objetivos de elaborarlas papillas con valores proteico-energéticos altos, que cubran los requerimientos necesarios para niños en edad de destete.
